I cannot take a lick of credit for this. It’s my mother’s recipe. It’s delicious and filling. Give it a try and you will be struck with cravings for it forevermore.
1lb. bacon, chopped
1 stick of butter
1 1/2 Vidalia onion, diced
1/4 cup flour
1/2 quart of whole milk
1 bag of mashing potatoes
32 oz. chicken broth
salt, pepper, nutmeg, and paprika
suggested toppings: cheese, scallion, and bacon
Cook the bacon, remove and save. Leave bacon grease in the pot and add half of the butter. Cook the onion until translucent. Add the flour to create a roux. Then add the milk. Separately boil and drain the potatoes. Add them to the main pot and use a hand mixer to roughly chop (should still be chunky, not like mashed potatoes). Add the broth and the remaining butter. Simmer and season with a dash of nutmeg and paprika. Salt and pepper to taste. Serve warm with suggested toppings.
