Okay, I know it’s called a veggie roast, but it also contains apples. Trust me, it’s for the best.
Ingredients:
small bunch of organic carrots
two small organic apples
two organic beets
one stalk of Brussel sprouts (if not bought on the stalk, use one standard bag)
one bag of pearl onions (tip: Trader Joe’s sells peeled, frozen ones)
olive oil
herb salt
Method:
Preheat oven to 350 degrees. Peel carrots and beets. Chop apples, carrots, beets, and any large brussel sprouts. Grease a sheet pan with olive oil (or use parchment). Cover sheet pan with all vegetables (and apples) in an even single layer, drizzle with olive oil and sprinkle evenly with herb salt. Bake until all ingredients are fork tender.
Serving suggestions:
-Offer as a side dish with Coq au Vin.
-Make Winter Salad
-Top with microgreens, parsley, celery leaves, and scallion. Serve with a poached egg and tzatziki sauce. Sprinkle with sumac before serving.
