Baked Blueberry Oatmeal

This is one of the recipes that friends ask for the most frequently. I generally send them a screenshot of my notes. How nice to have an actual post to direct everyone to now! Ha!

I hope you enjoy this not-too-sweet, soul-warming, tummy-satisfying breakfast treat.

Ingredients:

Blueberries (don’t measure, see below)

3 cups oats

2 tsp cinnamon

1 tsp baking powder

1/2 teaspoon salt

1 3/4 cup milk

1/3 cup maple syrup (or sub honey)

2 eggs

3 tbsp melted butter

pinch of raw sugar

Method:

Preheat oven to 375.

Line the bottom of a 9 inch pan with blueberries.

In a medium bowl, combine oats, cinnamon, baking powder and salt.

In a small bowl, combine milk, eggs and syrup.

Pour the oat mix over the blueberries.

Pour milk mix over oats.

Sprinkle on more berries, drizzle melted butter and top with sugar.

Bake for 40 minutes (it should be golden and bubbling).
