Once you’ve had this salad you will crave it again and again! Consider yourself warned. It also happens to be a great way to use up leftover grilled corn during the summer. And no, there are not measurements for any of the ingredients. It’s a salad! I’m sure you’ll figure it out.
grilled corn, off the cob (or char some precooked corn in a skillet)
peppers (any combination of sweet and hot varieties)
cojita (or sub nutritional yeast to keep it vegan)
fresh salsa (homemade or a fresh store bought version recommended; not the jarred, saucy, shelf stable type…)
*dressed with lime juice and seasoning (taco seasoning, chili powder, or similar blend)
