I hesitate to even call this a recipe. More accurately, it is a variation of pancake mix and method.
Your favorite pancake mix (and any necessary add-ins)
1 tsp. lemon zest
1/4 tsp. poppy seeds
6-8 drops of lemon essential oil (ONLY if you use a food safe brand like DoTerra or Young Living, otherwise sub lemon extract)
Preheat oven to 350 degrees. Mix up the pancake mix according to box instructions. Add zest, poppy seeds, and lemon oil. Stir to combine. Grease a mini-muffin pan. Spoon mix into pan (small ice cream scoop is perfect for this). Bake for 12 minutes or until a toothpick comes out clean. We dip ours in warm maple syrup.
